The Fluffiest Pancakes

I love pancakes. They aren’t Paleo, but I love them and make them often for my family. These are delicious, easy, and most of all FLUFFY!



  • 1/2 cup all purpose flour
  • 2 teaspoons baking powder
  • 2 tablespoons granulated sugar
  • 1 egg
  • 1 tablespoon vanilla
  • 3/4 cup milk, plus 2 tablespoons
  • pinch of salt
  • 2 tablespoons unsalted butter, melted

In a medium to large sized bowl, mix flour with sugar, baking powder, and salt.


In a separate bowl, (I like to use a 2 or 4 cup measure for this) mix together the milk, vanilla, egg, then add the butter.


Add the wet ingredients into the dry and whisk together.


You can use nonstick pans if you have them, but I reallllllllly love making pancakes in cast iron with butter. They turn out perfectly every time. Over medium heat, melt a little bit of butter and drop a scant 1/4 cup of the batter for each pancake. When they start to bubble and form around the edges, it’s time to flip.

Serve with butter, syrup, or any other goodies that make your heart happy.
